I've sure been posting a lot of baked goods... it's about time for a salad wouldn't you agree? To me a salad needs to be easy to throw together, nothing complicated going on here. Some good greens, accents of flavor and color, some good proteins and you are good to go.
This one had romaine hearts, cucumbers, some Mediterranean spiced feta, topped with a grilled piece of salmon (I gave the salmon a little drizzle of olive oil and some cracked pepper before it hit the grill). As for the dressing, I whipped up a creamy balsamic number.
Like I've said before with other proteins, they need to be moist and tender. I wont eat over cooked fish so I make sure to keep a close eye on things if not under cook it slightly. You can always put it back on the grill for an extra minute... but you can't undo overcooking.
For the dressing... it's really not a recipe more a toss it all in a bowl and mix so these measurements are a guess...
Creamy Balsamic Dressing
1/2 cup plain fat free yogurt
tiny bit of canola oil
3-4 Tbs balsamic vinegar
freshly squeezed lemon juice
1 tsp Dijon mustard
sea salt to taste
freshly ground black pepper to taste
Chow!

ReplyDeleteYum! I have a texture issue with fish. By itself I can't eat most but on top of a salad I sure can, since it adds a crisp crunch! This looks great!
ReplyDeleteI'm not a salmon fan, but I think that dressing would also work great with a grilled chicken breast. Pretty salad Steph.
ReplyDeleteI always put dijon mustard in my vinaigrettes! YUM, looks good! I cook all the time but usually just post my baked goods too. I guess they're a tad bit more exciting to me? Or better looking? More difficult... All of the above!

ReplyDeleteYum! I often leave salmon a little raw in the middle because I really don't like overcooked fish. I have a phenomenal(ly simple) teriyaki recipe that I like to marinate my salad salmon in...will send to you if I think of it when I'm home!

ReplyDeleteAny idea how long something like this would keep in the fridge? I'd think as long as yogurt normally would, but I don't know if anything strange would happen when you mix it with a bunch of acidic elements...
ReplyDeleteElaine- great question... I actually had some leftover in the fridge for about two weeks and finished it off the other night... no adverse side effects so I'm guessing it was still good LOL :D
