Pistachio Muffins

Pistachio muffins are one of those things I have a soft spot for... although I am a bit picky, I don't like the kind with big chunks of nuts... same goes for pistachio ice cream. I don't know what it is, but I'd rather just have a smooth bite... no extra chunks hanging out!


This wasn't too much of an issue when I made these, since I realized all too late that I didn't really have enough pistachios to grind up. How good do these guys look all ground up in my hand dandy coffee grinder??


I'd give you the recipe... because I know they look so freakin good... but the truth is they were only ehh... they needed more pistachios... and I didn't have any... yet I still made them and went tweaking my already tweaked on paper recipe. Don't worry though... my love of pistachio muffins will have me making these again for sure!

    I love pistachios! They're such an underrated nut, in my opinion :) Sorry that the muffins were just "eh" though - try it again, for sure!!

    I have never had pistachios (!) I have a pistachio Lara bar though and thinking of using it with dried apricots for my Lara cakes... How come they don't make pistachio butter?!

    Ooh... I can't wait til you perfect the recipe. My boyfriend wouldn't touch the zucchini cupcakes I made with a 10-foot pole... but he loves pistachio cake, and I know he'd love these!

    Never put them in a muffin...only cookies. Looking forward to seeing a recipe soon. Once you get them right of course!

    Oh, and we plan to stay at the Galleria in SF too. Haven't booked the room yet though...woops!

    These muffins have the perfect colour and dome. I don't like chunks of nuts either, but I'm so lazy when it comes to the food processor. I really need to get one of those magic bullets from TV.
