Summer or Winter

The weather can't make up it's mind around here. I woke up tuesday and it was snowing like mad out.. wait what??? And now they are saying in the 80's this weekend!

No matter the temperature outside, I'm always game for a slice of frozen hazelnut and PB pie :) This is a lighter version with all the flavor and tastiness of the full on version, seriously, go try it... you wont be sorry!


Light PB pie in the sky

Beat together
1/2 cup Better than Peanut Butter
4 oz. 1/3 less fat hazelnut cream cheese (I got it from Panera)

Then stir in
1/4 cup splenda (or 1/4 cup white sugar)
1/2 cup skim milk

Then fold in
1/2 container fat free cool whip

Slop it into a graham cracker crust (chocolate or regular) and freeze for a few hours.

Let sit at room temp. for 15 minutes to slightly thaw.

As you can see in out picture... we didn't wait until it was totally frozen... we couldn't help ourselves!

  4. I know, the weather has been CRAZY this week! Looks like its going to be a nice weekend though, enjoy it!

    And this pie looks like a winner too. The hazelnut cream cheese is a new one on me, but it sounds yummy!

  6. I have a similar pie that I make, except I use a Fiber One crust and the powdered PB2..I've found the consistency of the powdered really works well!

    Like you I love using whole wheat flour, applesauce instead of oil/butter..basically going healthy whenever I can. You have a lovely space here!

  9. I will definitely be making something similar once I've recovered from the ridiculous food overload from this weekend (two parties for which I made rye boats and carrot cake, all from scratch).
