Dear Pad Thai,

.... why must you hate me...


I keep trying to make you at home... I really want things to work out! I mean I'm always trying so hard... and every time you let me down. I'm beginning to think this relationship isn't working pad thai... I think we need to break up... you're too high maintenance... either too sweet, or just coming out bland... You are always so good when we eat out... yet at home when it's just you and me, it's just not working. I left you a box to put all your stuff in, please be gone by the time I get home tonight.

  1. I love Pad Thai! I made it years ago with a recipe I found online, but just a few weeks ago I made Jaden Hairs recipe. It was great!

  3. You are so funny! I need to have the same conversation with tofu. The phrase tofu with peanut sauce strikes fear in the heart of my family to this day. That experiment was 6 years ago! lol!

  4. OMG, Steph, Pad Thai is my culinary nemesis too! I keep trying to fix it at home, and it's always a disaster! I'm still persisting, though... Let me know if you figure out the secret! :-)

  5. My fave pad thai is from the girls who write the Looneyspoons cookbooks. It's easy and very middle-of-the-road spice-wise so you can add lots more of anything to amp it up. Maybe it's not a "traditional" pad thai but it's delicious and all the ingredients are easy to find. You should try it!! Here, I found it:

  7. Meeee too. It's just one of those things that I'll continue to be delighted to try at restaurants (though many restaurants do it poorly too!).

  9. Ha, this post made me laugh. I've tried to make pad thai at home too without much success. Especially since I am spoiled by the best pad thai on the planet down the street from me. Sigh.

  13. I had Pad Thai take-out this weekend and it wasn't as good as usual. I was disappointed. I haven't tried to make it at home although I did buy some of the stuff to make it. Don't give up - you'll get it!

  14. Ahhhh, isn't it heartbreaking to break up with a food? I can understand your sadness. Pad Thai is insanely mouthgasmicly good when prepared by a master. I can't cook eggplant, have just about given up on it.

  17. Yes, Pad Thai woes. I am familiar with this heartache. I actually find it hard to find a good pad thai even at restaurants(and once I find one I either move or the store shuts down) I like the tamarindy kind, not the tomatoey kind. I shared my struggles out to my friend, who said "Make it yourself" but previous attempts have all been just awful. And there is no way once I find a good recipe that I am tweaking it to be healthy! I will just deal with the fatty deliciousness that it is, so I guess its elusivity is a blessing in disguise (for my hips which cop enough from my instistance on baking brownies)

    One tip though - Dont eat Pad Thai from Thailand. All my friends who have eaten there, then returned to Australia have NEVER found a Pad Thai anywhere near as good at home. So either dont eat Pad Thai in Thailand, or move there forever :D (or get taught how to make it there too)
