Almond Butter Cookies - vegan friendly


I'm back in baking action!! Wooohooo! We finally had a relaxing weekend where we weren't rushing around. Ahhhh did it feel good. One of the things I wanted to do this weekend was experiment with some jars of creamy almond butter that MaraNatha sent to me. I was so excited when they asked if I'd give their nut butters a try!! I heart nut butters!


I also heart PB cups... so I figured I'd make an inside out almond butter cup cookie as my first experiment :) This is for a small batch so totally double it unless you're making just enough for yourself and your sweetie :) Oh and a bonus, these are vegan!


Inside out almond butter cup cookies
recipe by steph chows
makes 9 cookies

whisk together:
1/4 c whole wheat flour
1/2 tsp baking soda
1/2 tsp cinnamon

cream together
1/2 cup almond butter
1/4 cup brown sugar

then in a small bowl mix together
2 Tbs flax meal plus 2 Tbs water

You will also need:
9, 1/2 inch chunks of dark chocolate

Add flax mixture to almond/sugar mixture, then add in dry ingedients. Mix until incorporated. Using your hands grab off 1" size balls and stuff a hunk of dark choclate into the center of each, roll into balls and place on an ungreased baking sheet.

Bake at 350 for 10-12 minutes

Enjoy your tasty almond cookies with a glorious chocolate center!

  9. these look good, I'll make them for my son. I just got a jar of almond butter in the organic food store and have been using it for oatmeal and stuff. yum yum

  10. I added vanilla and omitted the cinnamon but I don't think I stirred my almond butter well enough because they were super oily when I was forming them. Still very tasty though!
