Pesto makes my heart happy

Who doesn't like getting stuff in the mail? I love it! Better yet is when you get something you aren't even expecting :)

Big thanks to Mezzetta! I'm a huge advocate of spiking your pizza sauce with pesto, I mean sure you could just use pesto as the pizza base... but I like adding it into my sauce :) And it's a super easy way to add a ton of flavor!

Pesto pizza sauce
6oz can tomato paste
2 tsp chopped garlic cloves
2 Tbs Mezzetta pesto
1/2 Tbs olive oil
black pepper to taste
salt to taste
couple glugs red hot

2/3 cup water

Mix everything through red hot in a bowl, slowly stir in water and stop at desired consistency. Taste, add more spices if you like, that's it, you're DONE.

As for the olives, although I was excited for them, olives are about the only thing I don't like to chow... good thing I have a roommate and her boyfriend who also love to chow. Her man took them home and said they go great with steak salad... sounds good to me :)

Pesto is seriously good on everything... what would you slather it on??

  1. We actually used their pesto in a pasta recipe not too long ago. It was one of the better pre-made pestos in a jar.

  2. This pizza sauce sounds so good and so easy! I like to toss oven-fried potatoes in a little pesto. I recently discovered cilantro in a tube via my sister-in-law and brother-in-law. It's a pretty good substitute for the fresh stuff, and handy to have in the fridge if you're like me and always forget to buy the fresh herbs.

  3. This post is making me long for summer -- when my garden is teeming with basil and pesto is a foregone conclusion! My absolute favorite application for pesto is on a veggie sandwich. Give me some grilled zucchini, peppers, onions, and eggplant... spread a nice foccaccia roll with mayo & pesto... I'm in heaven.

  4. I love the idea of adding pesto to sauce, especially since I have a little jar of it with only a few TBSP left. Can't wait to try this, thanks!

  5. Except for possibly ice cream, I haven't found a blessed thing that I don't love pesto on.

But to second Lo's comment: pesto mayo works wonderfully to kick up just about any sandwich. A little turkey and munster with fresh greens and pesto mayo - one of my favorite lunches.

  6. What would I slather it on.. are you kidding? I eat the stuff by the spoonful! I actually just had a really good sandwich last night with fresh mozzarella, fried green tomatoes, and pesto. Yum. I like it on fresh bread, with goat cheese, stirred into pasta... such good stuff!

  7. When you were here I totally should have taken you to Pizza my Heart for lunch! It's the first place I ever had pesto pizza, and I immediately fell in love.
I used to hate olives! And while I don't love them now... their a'ight.

  12. Pesto has always been a staple in our Italian family--currently I am loving sun-dried tomato pesto.

  13. What a great idea! When making pizza, I tend to think it's all or nothing- Either all tomato sauce, or all pesto. I never though to combine the two before, but good does that sound.
