Eggplant and Garlic Sauce

Another thing we got copious amounts of in our CSA were this tiny tiny baby eggplants. What does one make with tiny eggplants?eggplant and garlic sauce! I also used a whole head of fresh garlic that also came via the CSA. mmmm garlic!!! I didn't really follow a recipe for this so here's an eyeball overview of what I did.

Probably 12 or so mini eggplants cut into rings or halved and cut into rings
1 onion sliced
1 head of garlic, chopped
1 fresh jalapeno chopped
oyster sauce
soy sauce
tiny bit of corn starch to thicken the sauce
brown rice
hot chili oil

First heat up the chili oil and saute the onion and garlic until nicely browned. Add in the eggplant and jalapeno until soft and cooked through. Add in oyster and soy sauces and toss to coat, if you want a thicker sauce add a little bit of corn starch. Cook brown rice according to directions and serve!

What's your go to eggplant recipe? Normally mine is eggplant parm, but these seemed to tiny to bother with the fuss of making it.

  1. OMG, I'm so jealous that you have eggplant in your CSA box! Our CSA box hasn't produced any eggplant yet... Hmmm... You know, though, jealous in the happy for you way... :-) This dish looks gorgeous! I adore/am obsessed with all things eggplant - I'm soooo fixing this with eggplant from the farmers market this weekend! Thank you for the brilliant idea!! :-)

  2. I hope you get some soon! For whatever reason we've been getting tons of them this summer from our CSA! Last week was the final week though... so it'll be trips to the farmers market for me from now on :)

  3. That's exactly what I'd make with it too! Chinese eggplant in garlic sauce was my favorite entree at Chinese restaurants in high school. I've since expanded my tastes but it still holds a special place in my heart :)

  5. Yum, this sounds delicious!  I like that you went Asian with this.  I've always been tempted to get eggplant out at Chinese restaurant.

  6. Nice! I've been simply roasting my baby eggplants with some olive oil and salt until they're crisp on the outside. so good!

  8. Great way to use baby eggplant! We didn't even get any in our CSA this year, which was sad. But I'll keep this in mind for next year if I get any at the farmer's market. :-)
