John makes wicked good bruschetta. He made this at some point this summer and said he would write a post about it... since it's been a good 2 months and he hasn't posted yet... I'm going to. Because this is just too tasty looking not to post!
Whole wheat baguette, fresh tomatoes from a friend's garden, basil from a pot out on our porch, fresh mozzarella, and a drizzle of olive oil. Toss it in the oven to broil and toast up for a bit... heaven.
What's your favorite way to make bruschetta?

ReplyDeleteI usually mix together tomatoes, basil, olive oil, and a tiny bit of balsamic... and some salt and pepper. I think this version with the broiled mozzarella would be delicious as well!

ReplyDeleteI like making bruschetta chicken. Breaded chicken topped with breadcrumbs, parma cheese, and garlic, and the topped the last 5 minutes with bruschetta to finish it off. So Good!
ReplyDeleteSimplest is best! I love anything with roasted veg, hummus, and/or tapenade... It's hard to go wrong with almost any combination of the above elements. :)

John's version rocks!I like to spread roasted garlic on the baguettes, a slice of heirloom tomato, herbed goat cheese, evoo and fleur de sel and fresh cracker pepper.
