PB oatmeal cookies - part 2

I said I'd get back to this recipe with some tweaks... and I did. Now this makes 24 cookies, delicious as before. I'm addicted to these things, no joke. Love love love. Perfect snack time food.

PB Oatmeal Chocolate Chippers

makes 24 cookies

In a medium bowl whisk together and set aside
2/3 cup whole wheat flour
1.5 cups old fashion oats
1 tsp baking soda
dash of salt

In a large bowl beat together
1/3 cup smooth peanutbutter
2 tbs smart balance (or butter of choice)
1/3 cup brown sugar
1/3 cup splenda (or use 1/3 cup white sugar)
then beat in 2 eggs and 1 tsp vanilla

Mix dry into wet, then add 3/4 cup chocolate chips

Using your hands (time to get dirty!) form into tablespoon size balls and then smoosh flat onto a greased cookie sheet.

Bake at 350 in a preheated oven for 12-15 minutes. Remove and let cool.

Gotta say, don't make them yourself...you'll discover just how easy and yummy they are!  They aren't such a healthy choice if you eat the whole batch!  Not that I'd know anything about that...

Peanut butter, chocolate and oatmeal-I'm pretty sure they'll be the best cookies ever!

Yum! These look so delicious :) My go to snack is hummus on anything, crackers, veggies, pita breads, toast. I wonder if it's possible to be addicted to it?!

Sounds great! It's been a while since I last made oatmeal cookies, so now you've got me craving them again.

Snacks are greatly varied in my house, any just about anything can become snack food when nibbled on throughout the day- Even leftover baked tofu. I have to admit though, I do have a soft spot for soy crisps... I know some people regard them similarly to rice cakes, but they're really so much better!

Nothing wrong with a little hummus love! I can easily eat a whole batch with a crusty loaf of bread when we make it at home!

Soy crisps have a lot more protein than rice cakes though! I agree I like them them better too. When I'm craving a salty snack I end up eating pop chips, those things are addicting, not as healthy as soy chips, but far better than potato chips! Ever tried them? I know some of their flavors are vegan, but not all of them :)
