Cashew Oatmeal Cookies

Dear Matt-

Thanks for going to pick up that saw off of craigslist with the husband. You rock. By the way, I hear you shoot archery, want to go shoot some foam animals sometime? Hope you like the cookies.

Yup that's pretty much the gist of the note I sent along with these cookies. I've never met Matt, and that note to him doesn't sound creepy at all as a first time intro... ok yes, yes it does.


Do you buy stuff off craigslist? We totally have, although sometimes you meet some seriously interesting people... apparently the guy selling the saw was one of them... glad I wasn't there! :) Thanks again Matt!

Peanut Butter Oatmeal Cookies
recipe found on Food Fitness Fun

Ingredients:
½ cup all-purpose flour
¾ cup whole wheat flour
1 cup quick cooking rolled oats
½ teaspoon baking soda
½ teaspoon salt
¾ cup brown sugar, packed
1/3 cup butter, softened
1/3 cup creamy peanut butter (truth be told I used cashew butter)
1/3 cup nonfat buttermilk
1 tablespoon olive or canola oil
½ cup dark chocolate chips

Directions:

Preheat oven to 350 degrees.
Spray a cookie sheet with nonstick spray.
Combine the first five ingredients [through salt] in a medium bowl.
In a large mixing bowl, beat sugar, butter, peanut butter and buttermilk together.
Stir in flour mixture until a soft dough forms.
Add chocolate chips.
Roll dough into walnut-sized balls and place on prepared cookie sheets, 2 inches apart.
Flatten gently with the back of a spoon.
Bake 10-14 minutes.

LOL yeah and I seriously wrote that! Hehe, you can come shoot foam animals
next time you are up to visit :) it's wicked fun! Much better than shooting
real animals, that would make me cry. Plus they have all types.. bear, deer,
armadillo, t-rex! LOL You know it would be fun :)

Oh yeah... the craigslist peeps can be an interesting lot sometimes! I had somebody come to my house to pick up a dresser, and the guy literally almost fell in my living room 3 times... He kept forgetting about the step. Not the sharpest tack, it seemed.

You definitely have to be careful about craigslist; I've never gotten anything off of it, but I have sold a few things! Hahah love your note!

I've never tried cashew butter and have always wanted to! These cookies look so tasty..I might have to get going on making some cashew butter so I can try these! :)

I once almost got conned on Craigslist while looking for an apt...someone tried to make me pay them the deposit before even showing me the apartment. Luckily common sense kicked in.

Those cookies look delicious. I love that you used the mild, creamy cashews. I don't like PB but I adore CB!

I totally buy and sell stuff on craigslist all the time. In fact, right now I'm looking for a place to live in San Francisco on craigslist. It's addicting and frustrating!

Yum, those look amazing! I think I'd prefer them with cashew butter anyway. Cashews are my favorite nut I think.

Eekk! That sounds like a lawsuit waiting to happen! LOL

If you like cashews you'll like these for sure! We've sold stuff on
criagslist too, mostly to nice ppl, but with the occasional crazy phone call
that leads to.. ummm yeah it sold already... so you can't come over LOL

I've heard of stuff like that happening before! You can never be too
careful! Glad you didn't fall for it!

Oh my goodness these cookies look sooo good. I love how you used cashew butter! :)
