Asian almond slaw

Is it friday yet? Really?? WOOHOOO! We were supposed to get a snowicane... a snow storm and hurricane mixed together. So far not so much... this is a picture from Thursday morning... I'm writing this Thursday evening so it's rather possible when this posts I'll be burried under the snowicane... lets cross our fingers and hope it's not too bad :)


This dish has nothing to do with snow... I love an asian twist on cole slaw. My go to recipe is a tasty PB sauce for sure... but what if we mixed it up and used almond butter instead? The result... delicious!

Almond Asian Coleslaw
1/2 head green cabbage chopped into thin strips
2-3 carrots, sliced into thin strips using a vegetable peeler

3 Tablespoons almond butter

2 Tablespoons low sodium soy sauce

2 Tablespoons rice vinegar

2 Tablespoons light brown sugar

Sprinkle top with sesame seeds

Chop and slice cabbage and carrots and place in a festive bowl. In a small bowl blend together almond butter through brown sugar. Once your sauce is all incorporated, pour over cabbage/carrot mixture and toss to coat. Refrigerate until ready to serve, then sprinkle with sesame seeds.

This stuff tastes even better the next day after it's had time to marinate.

yum! i'm so happy to find an asian recipe that used almonds instead of peanuts. (i love almonds, but i've never really liked peanuts...) i bet this would be awesome on a salad or in a wrap!

NYC is having the snowicane ... its bee snowing here for more than 24 hours. I am NOT amused.

Meanwhile, this slaw looks fantastic, Steph! I'm a sucker for anything with a peanut sauce ... but the almond switch-up is a nice twist. Will def. try this!

update: we got a good 10 inches of snow... but the wind blew it all off my car for me... except one side... that had a good 6 inches somehow holding on to the left side of my car LOL it looked awesome! on a side note... no one plowed the side streets by work... hooray for AWD! love my car :D

OMG. I pretty much had this for dinner on Wednesday! But the one my roomy made had broccoli stalks in it too. Yours looks good too. Yum!

We got your hurricane over here in Boston! 60 mph winds and torrential downpour, I would have killed for some snow.

This looks great; I like vinegary slaws (it's the German heritage) rather than mayonaise ones, I'll have to try this!

You crack me up, snowicane! We had a snownado on Christmas eve (that's snow and tornado for those not living in the heart of tornado country). Slaw looks mighty delish!
