Banana Oat Bars

One of John's coworkers has taken notice of all the random baked goods he brings to work with him for snack time, and asked when I was going to make something for John to bring in and share. He gave me a challenge.

I challenge you to make me something that's tasty and ridiculously healthy. Pack it full of fiber so that I don't realize it until its too late!

I can't not take a challenge!! So I think I'll be making a batch of these to send in with John next week... what do you think... enough fiber for him??


I'm in love with this recipe and this has been tweaked thanks to my friend Niki (not the original Nikki of the recipe...), she was out of almonds to make almond flour so she used whole wheat, and she didn't have rolled oats so used quick oats... they came out with a better texture than the original if you ask me! I can't wait to send them in with John and see how everyone likes them :D

Banana Oat Bars
These are adapted from 101 cookbooks Nikki's cookies.

3 large, ripe bananas (the browner the better!), well mashed (about 1 1/2 cups)
1 teaspoon vanilla extract
1/4 cup unsweetened apple sauce
2 cups quick oats
1/3 cup whole wheat flour
1/3 cup flax seeds
1/3 cup coconut, finely shredded & sweetened
1/2 teaspoon cinnamon
1/4 teaspoon fine grain sea salt
1 teaspoon baking powder
1/2 cup dark chocolate chips
1/3 cup dried cherries or other dried fruit of your choice

Preheat oven to 350 degrees, racks in the top third.

In a large bowl combine the bananas, vanilla extract, and apple sauce. Set aside. In another bowl whisk together the oats, flour, flax seeds, shredded coconut, cinnamon, salt, and baking powder. Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks and dried fruit. Press the mixture into a greased 8" stoneware pan and cooked them for about 30 minutes. I cut them into 12 bars.

I made the cookies last month and thought they turned out well. Unfortunately I only had semi-sweet chocolate, and definitely think dark would be better!

Thanks for sharing this recipe, I think I'll have to try it!

These sound yummy, but could the banana be substituted out? Maybe pumpkin? I'm just not a banana eater unless it's in banoffee pie.

Sunshine- funny you ask! I was wondering the same thing, but we are out of pumpkin here!! So I haven't had a chance to try, as soon as I find some I'm going to make them that way for sure :D

These look awesome! I bet you could add some bran and pack even a little more fiber in there! Fiber and protein are probably the only two things I pay attention to when picking out snacks and such.

Wow, they look and sounds yummy! Did you analyze how much fiber is in them? If you want, I can run it on nutritional analysis software and let you know the breakdown. :)

Okay, I am not sure if you used ground flaxseed or whole...

If you used whole flaxseed: 179 calories, 6 g fat, 3 g saturated fat, 30 g carbohydrate, 5 g fiber, 12 g sugar, 4 g protein

If you used milled flaxseed: 172 calories, 5 g fat, 2 g saturated fat, 29 g carbs, 4 g fiber, 12 g sugar, 4 g protein.

Other highlights: each bar provides 42% DV manganese, 11% DV selenium, 11% DV magnesium, 9% DV vitamin B6, 9% DV thiamin, 9% DV phosphorus, and 7% DV iron.

So they are vitamin and mineral rich too, and of course zero cholesterol.
