Vegan Agave PAMA Oatmeal Cookies
Have you ever heard of PAMA? It's the best smelling thing ever! It's pomegranate liqueur and it is like heaven. The wonderful people at PAMA asked if I'd like to sample some of their amazing product and of course I couldn't say no! They are also currently selling a PAMA infused cupcake ... perfect for valentines if you ask me!
I decided I wanted to bake with my PAMA... I know I know... why not just drink it? Well they sent me two little bottles so I figured I'd drink one, and play with the other :) Seems my favorite thing to do is boozing up raisins, so that's where I started. I also decided to use agave as my main sweetener and go all organic on these cookies!
The dough is amazing... in all reality next time I make these I'll be nixing the oil and forgoing the baking... I'll just mix the rest up and use it as an ice cream topper... because seriously... the dough was amazing. I felt like I could get a buzz off of it, it smelled intoxicating! The cookies were darn tasty... but some of the intense PAMA flavor that was so powerful in the dough... baked away *tear* it really was a sad affair. Also the cookies fell apart a bit... next time if I do bake them I'll add in 1 Tbs of flax meal mixed with a little water as a binding agent. That way they wont be so finicky.
VAPOC (Vegan Agave Pama Oatmeal Cookies) cookies!
recipe by steph chows
mix together
1/2 cup old fashion oats
1/2 cup whole wheat flour
1/2 cup unsweetened coconut
dash of salt
In a bowl stir together and let soak 20 minutes
1/4 cup agave
2 Tbs PAMA liqueur
2 Tbs canola oil
1/4 tsp vanilla
1/3 cup raisins
Didn't do this part... but should have:
mix 1 tbs of flax meal with 2 Tbs water, add to wet mixture to help hold things together...
Mix wet into dry, scoop into teaspoon sized mounds on a greased baking sheet and bake at 350 for 15 minutes.
To make as an ice cream topper, nix the oil and flax and serve over a nice bowl of ice cream... or rice cream if you want to keep it vegan :)

Is it the same as Pomegranate molasses? It doesn't look as dark and sticky! But I adore Pomegranate molasses and I bet I would love this too!

Very interesting, I hadn't heard of Pama before... But it certainly sounds fantastic! I would have loved to try mixing up a drink with it, just to try it out, first. ;)
I love that when you get free booze you bake with it, whereas if I were to get free booze, the reaction would be, "Whoo, I'm gettin' drunk tonight!"
Joy to answer your question, it's nothing like pom molasses, this is straight up alcohol infused with pomegranate flavors!
