So I'm getting married a year from today!! I think that's pretty exciting at least... I told John the other day that if he's gonna run he better do it now and not wait :D I found this very amusing... his mom freaked out when I told her about it "Don't tell him that!!!" LOL whooops!

Anyway, the other day I was sitting on the porch eating breakfast and reading this amazing book "One Perfect Day: The selling of the American Wedding"


Even if I wasn't in the middle of wedding planning (wait who am I kidding I'm not planning anything.. haha, go with the flow I don't need all those little favors and other assorted crap... efff it!), I'd read this book, it's a really great read and totally eye opening... And if you are planning a wedding, go check this book out of the library and read up! Seriously good. And if you hate hearing about wedding talk then ignore me and skip to the part about breakfast here:


Simple quick delicious and nutritious: Greek yogurt with strawberries, a little honey, and some Fiber One "twigs" as I like to call them. I love how protein packed and thick Greek yogurt is, it's fat free, but you'd never know it :)

I know I know I'm on a total muffin kick lately! I just love them though, so portable, and a great snack! This is a recipe for a more traditional blueberry muffin that I made up using lemon fat free or low fat yogurt as the base. Totally love how moist these muffins are! I added a crumble topping from the Recipe Round Robin I participated in, and I now dub these my new favorite traditional blueberry muffin! Hands down baby! It's got it all, moist tender center packed with blueberries, and a delicious crumble for some added sweetness on top!

healthy AND tasty... that's how I roll

Blueberry Muffins
1.5 cups whole wheat flour
1/4 cup splenda granulated (or 1/4 cup white sugar)
1.5 tsp baking powder
1/4 tsp baking soda
dash salt
1/2 cup apple sauce (I use unsweetened)
2, 6 oz containers fat free or low fat lemon yogurt (so 12 oz total) I used stonyfield farms low fat lemon this time SO GOOD
1 large egg
1 tsp vanilla
zest of 1 lemon
1.5 - 2 cups blueberries, rinsed and patted dry

topping
1 tbsp slivered almonds
2 tbsp firmly packed brown sugar
1 tablespoons whole wheat flour
3/4 tablespoons butter or margarine
1/4 cup uncooked regular oats

Pulse almonds 2 or 3 times in a blender or food processor until chopped. Add brown sugar and 1 tablespoon flour; process 5 seconds. Add butter; pulse 5 or 6 times or until mixture is crumbly. Stir in oats; set aside.

Preheat oven to 425 degrees and spray 12 muffin cups with pam.

In a large bowl, whisk together flour, sugar, baking powder, baking soda and salt. Set aside.

In another bowl blend apple sauce, yogurt, egg and vanilla thoroughly. Stir the wet mixture into the flour mixture just until combined. The batter will be very thick.

Add the blueberries and stir gently. Divide the batter between the 12 cups (they will be very full cups) sprinkle with topping, and bake for 6 minutes at 425, reduce heat to 350 and continue cooking for 12-14 minutes, or until tester inserted into center comes out mostly clean. Cool completely on wire rack.

Have you tried Oikos greek yogurt with honey? You seriously need to go try some. It's packed with protein and is crazy thick and filling. I wish it wasn't so expensive because I want to eat this stuff every day! I wonder if they have it at BJ's so I can buy it in bulk.. hmm I'll have to look into that. The yogurt plain is a bit too bitter for me, but with the mix in honey... it's divine! I may try buying the plain next time and mixing in my own honey.. mmmmm


Well I'm off to Vermont for the weekend!! I'm sooo excited!! I'm going with my friends Matthew and Kendra for a work weekend at Blueberry Hill! I can't wait! Lots of pictures and stories once I'm back! Have a great weekend!

My coworkers make fun of me for many things, but one thing they love to make fun of me for is how I'm constantly eating. I'm a six "small" (ok they aren't' all really small...) meals a day kinda gal. I've been known to stop mid workout for a little snack to get my blood sugar back up. Don't get me wrong I eat plenty I'm not anorexic or anything like that (just ask anyone who has seen me eat hehe). But as the title of this page says... I like to chow! This is another John recipe that I thought he was a weirdo for but is now a staple in my diet :) I eat this everyday around 4 or 4:30 about an hour before I head to the gym. It keeps me fueled through my workout so I can last until dinner time around 7 or 730. It's super simple and healthy.

Creamy Oatmeal
1/2 cup dry oats
1 cup water
8 oz container fat free yogurt (i like wegmans fruit on the bottom fat free cherry vanilla YUM)

Place oats and water in a bowl, microwave for 2 minutes.
Remove and stir yogurt into cooked oats.
Enjoy!

A quick and easy 200 calorie snack filled with 4 grams of fiber and 12 grams of protein.
