3 Ingredient Recipe

I'm a big fan of quick easy side dishes, especially ones that help use up all those CSA veggies we've been getting. In this past month's issue of Real Simple they had a whole section on 3 ingredient recipes, this one caught my eye since it involved bok choy (one of the things I happened to find in last week's basket).

I picked up this cilantro from the Rochester Public Market. For those of you who don't live here, it's an amazing open air farmers market open all year long. This is about half the bunch and it cost a grand total of $1.50. Plus the farmer told me how he pulled it out of the ground just that morning, you seriously can't get any fresher than that. (The market actually won a nationwide contest for America's favorite farmers market in 2010!)

Next time I make this I want to add something else... I'm not sure what though. John agreed that it was missing something... there was no pow... but maybe we just like super bold food.

Boy Choy and Pineapple Slaw
Recipe from Real Simple Magazine June 2011
4 cups thinly sliced baby bok choy
1 cup fresh cilantro leaves
2 cups thinly sliced pineapple
3 tbs olive oil
1/2 tsp kosher salt
1/4 tsp pepper to taste

Toss together and let sit 15 minutes before serving.

Any suggestions on what you'd add to really make this sing?

You added a cup of cilantro and that didn't have enough POW!? Um. Wow. While I like cilantro, I find it generally gives everything enough pow.

Yeah you would think that would have been enough! But the bok choy and
pineapple pretty much mellowed it all out!

OMG, I saw this recipe in my magazine after I already ate the bok choy from our share. Will have to try this if they give us more of it. :)

On a side note: I made these... http://thegoodfoodcollective.com/2010/black-bean-cakes-with-scapes-chard/

They were freakin' amazing!!!! So good, I might blog about it.

OOO those look great!! We get our next basket tonight! I can't wait to see
what we get :) I cut up scapes and put them on pizza last night! It was
delicious!

That is super food. A few simple ingredients is all you need when preparing flavorful healthy dishes.

I would likely have added some sort of acid. Maybe a squeeze of lime juice, or a bit of rice vinegar.

I agree I think it needed a little acid... maybe some apple cider vinegar
next time!

I probably would've added some lime juice and a dash of chipotle powder!

It's good to see a fellow Rochesterian having so much fun with food! I loooooove our Matket :)

Sounds perfect to me! I love the public market!

I have 2 ideas for more "Pow" -- skip the pineapple and just add fresh Pecorino cheese ( what can I say? I heart cheese). OR, keep the pineapple, but give it a soy/ginger glaze? Although that would be more ingredients. . .

OO that sounds like a great idea!!
