CC Cookie Muffins


Yup, it's a cookie, it's a mini muffin, it was a total toss up in the air, say a little prayer, and hope it comes out right. Seriously now, why do I try to randomly make up stuff when I know full well I'm making it to give to someone as a "get well" baked good. I'm crazy! I seriously think I have a problem. It's easy, print a recipe, follow it word for word. NOT look up a recipe and then change all but one of the ingredients and come up with something totally random... maybe I should start a support group? Recipe tweaker anonymous?

Mini anything are cool in my book and these are no exception. They are somewhat dangerous though, I kept wanting to pop one after another into my mouth, so freakin tasty!!


Chocolate Chip Cookie Muffins

make 24 mini muffins
350 degrees, 15 minutes

You will need
1 package (2 containers) gerber prunes and apples (total of 5 ounces)
1/4 cup dark brown sugar
1/4 cup splenda granulated (or 1/4 cup white sugar)
1 egg
1 tsp vanilla
1 cup whole wheat flour
1/2 cup pulverized oats (just give them a whirl in the food processor)
1 tsp baking soda
pinch salt
1 cup chocolate chips
1//3 cup low sugar chocolate cake mix (yes very random I know... I told you I was just tossing things in!)

In a medium bowl mix together
1 package (2 containers) gerber prunes and apples (total of 5 ounces)
1/4 cup dark brown sugar
1/4 cup splenda granulated (or 1/4 cup white sugar)

then beat in
1 egg

stir in
1 tsp vanilla

In a small bowl mix
1 cup whole wheat flour
1/2 cup pulverized oats (just give them a whirl in the food processor)
1 tsp baking soda
pinch salt

Add dry ingredients to wet, then stir in
1 cup chocolate chips
1//3 cup low sugar chocolate cake mix

Divide among 24 mini muffin pans (make sure to spray the pan with some pam or grease it in some way)

Bake at 350 for 15 minutes.

CHOW!!!

Im just as guilty, always messing around with GOOD recipes...however its those recipes that turn into our own personalized little creations. Just like these little muffins! They sound SO good and I love how healthy you made them :)

Alright Steph, my three favorite foods are cookies, cake, and muffins. You have combined two of them and I am very impressed. Love the recipe!

Mini-anythings are so cute! I love the bite-sized treats, they are somehow more satisfying and make you feel less guilty. Though these look healthy enough, so not guilt here! Delicious!

Those look so good! And I think it's cool that you have enough skill to make up recipes and have em come out great. I definitely don't! Haha

haha Yea that's the problem with me and mini ANYTHING...I can't help but keep eating them and I think it's OK to eat a whole batch because they're mini! :) They look absolutely delicious!

Make them into bars instead of cookies (update at the bottom of the post about it) and they are the perfect filling snack that will fuel anyone through a workout!
