Spinach Mushroom and Goat Cheese
...on top of a burger. Oh yes, bring on the tasty! My apologies to the veggies and vegans out there, I just couldn't help myself. There is something about a nice juicy burger that calls my name. I'd much rather make one at home, lets face it, the ones you get out are 100 times worse for you. This way I can choose a lean beef, not have it be 1/2 pound (don't look at me like you haven't polished off a half pounder on your own), and you can top it with whatever your little heart desires!
I'll be honest here, the mix of sauteed mushrooms, wilted spinach, a ton of black pepper, and a little crumbled goat cheese, would have been an amazing sandwich on its own... the burger was just an added bonus :)
So eat this alone, or on a burger like me. Either way, you're going to love it!
Put a little drizzle of olive oil in the pan, add your sliced baby bella mushrooms. Cook through. Add a few handfuls of spinach and a good helping of fresh ground pepper, and a dash of salt. Once the spinach is wilted, transfer to a bowl, or onto some bread. Sprinkle with goat cheese and enjoy!

This looks amazing. On occasion a juicy burger with savory mushrooms is DELISH!! I'll have to try adding the spinach. BTW, have you tried the prepared vidalia onion burgers from Wegs?? I bought them on a whim, and they are AWESOME... I bet you could make them really easily, but I'm very lazy. :)
I'll admit it; we eat burgers often. I always choose very lean ground beef, like Laura's Lean and top them with reduced fat cheese. Next time, however, I'll be trying your little concoction Steph. Looks tasty!
Yummy, your toppings look delicious! On occasion, I eat the Smokehouse burgers at Firebirds - never liked burgers my whole life until I got pregnant, then I craved them (Firebirds)! So, now I will still have one occasionally, but if I make it it's usually bison.
No worries, I'm just imagining that this is a veggie burger, topped off with those sauteed mushrooms and some tofu feta. Now THAT sounds delicious! ;)

Delicious! My favorite pizza topping is mushroom and goat cheese, and the best strudel I ever had was a mushroom, goat cheese spinach strudel!! I know I would love this!

i am so the same way with burgers! i just made some this week and just used lettuce and tomatoes from mom's garden, but this is now screaming at me to make more :)
