Strawberry Agave Jam

You got that right! It's jam time!! And it worked!!! It didn't turn into sauce! It's jam!! And it's delicious! I told you a little bit ago that the peeps at Wholesome Sweeteners asked me to figure out how to make jam with agave... well here it is!

I used frozen berries since it's not so much berry season right now. I'll test it again in the spring to see the correct lbs of berries when they aren't frozen. But if you missed out making jam, you could totally whip up a batch of these right now!

come on you HAVE to have cute jam labels when you make home made jam... at least it's a requirement for me :) plus it makes the best Christmas gift!

Tart Strawberry Jam sweetened with Agave
recipe by steph chows

2.5 lb bag of whole frozen strawberries
3/4 cup agave nectar (if you like slightly sweeter jam use 1 cup)
1 cup pomegranate and nectarine juice (use apple or white grape for a non-tart jam)
1 package Ball no sugar fruit pectin
7 sterilized 1/2 pint jars

Place frozen strawberries in a large pot, heat on medium until they start to thaw and sauce up. Once they are soft enough mash them with a potato masher. Add agave and juice and turn heat to medium high. Bring to a rolling boil, stirring the whole time. Keep stiring and let it roll for 1 mintue. Gradually add in pectin and continue to stir and boil for 3 minutes. Remove from heat and pour into sterilized jars. Process in boiling water for 10 minutes. Remove from water and let cool undisturbed overnight. For more specifics on canning check our this post here.

This jam was super flavorful and the pom juice gave it a nice tart kick!

Love that you used agave for this. :)

STELLAR!! So glad it worked :)

I knew you'd figure it out. Good job! And I like that you've labeled this "tart" for those of us who don't like really, really sweet jam.

Are you going to enter this in the POM contest? I went to their website and it looks like the contest is for "fresh" pomegranate recipes only. Am I reading that incorrectly?

Jessica- it took using pectin to get it to gel right but it's great!

veggiegirl- thanks!

Mags- LOL huh... you know what you may be right. I was going to... but maybe I can't hahaha should have tossed some pom seeds in there :D

Agave... nice!
I love a good, homemade jam. We don't eat enough of it to make our own (SAD), but I love to get is as gifts from friends & family. Totally better than anything you can buy.

Great - thanks for doing the legwork for us and figuring it out! I love your labels too!

Totally impressive! I have a bottle of agave and I have not a clue what to do with it! This is a great idea ( to can) if I only had the courage.

You are jammin'! Just had to say that...

Ooh, I love jam. And jam with agave sounds so good! The labels are adorable, too :)

This looks really good. Would it be okay to use Pomegranate juice instead of Pomegranate-Nectarine juice?

I've totally been living on all the yummy exchanges from your blog this past month after my move overseas! Would you be willing to do a Guest K Cooks? What is the first thing I should bake next week when I finally get my oven in my new house?

I can't wait to try this. I've been looking for a jam recipe with agave for some time. I previously made a strawberry jam with honey, which wasn't bad, but you could definitely taste the honey. Thanks for the recipe, I've already added it to my "must try list".

Any chance that this could be a freezer jam? We have no basement to store items, but definitely freezer space in abundance! Also, its MAJOR strawberry season right now, so we will be picking lots this weekend!

stephchows said...

Nanny- I've never tried it as a freezer jam but I don't see any reason why it wouldn't work, I'd just say to use a no sugar freezer pectin :) good luck!

Hi :) am new to your blog - but so excited to find a recipe for agave jam! Tried it last year (another recipe) and got syrup :(
Have a question. The amount of juice, is it 1/2 of each the pom and nectarine - totalling one cup, or 1 cup of each?
Thanks so much - looking forward to getting all these berries out of my fridge! Also - how much berries should I use if they are fresh?

stephchows said...

HI Tina so glad you found me! As for the pom/nectarine juice I used this kind that is already mixed, http://www.pomwonderful.com/products/juice/nectarine/
but straight up pom would be amazing too!

As for the amount fresh... I'm not 100% sure since I haven't tried making this exact recipe with fresh strawberries but I'm guessing a 1 to 1 ration would work for frozen to non, let me know how it goes!! Good luck!
