Stuffin'

Here in the US we'll be celebrating Turkey Day tomorrow! To start celebrating early John made some healthy delicious stuffing to have with dinner. He's a fly by the seat of his pants cook so nothing here is measured exactly, but it will give you a good basis to recreate it!

How will you be celebrating Thanksgiving (if you are celebrating that is)? We're meeting up with my side of the family and we get to meet our new niece for the first time!!! Pictures to come!
stuffing

John's Stuffin'
recipe by steph chows better half

12 slices whole wheat bread (toasted, cooled, then cubed)
1 white onion chopped
2 chicken sausages (cooked and chopped)
4 stalks celery chopped
1/2 cup chopped mushrooms
3-4 cloves garlic
3 carrots chopped
sun dried tomatoes
drizzle olive oil
few glugs red hot
poultry seasoning to taste
chicken stock - 2-3 cups

Saute onions, garlic, and other veggies in a pan with olive oil until tender. Throw cooked veggies and everything else into a gigantic bowl and stir. Leave your wife a note next to said bowl for her to find when she gets home from work asking her to bake it for you while you are at the gym, making sure to say please and thank you. Bake at 325 for about an hour or until browned on top. This is totally a test to see if any of you read the recipe... and yes this is exactly how it went down last night! :)

I'd sub the sundrieds for cranberries. I try so hard to like sundrieds but I just do not do not. But I LOVE savory-sweet combos. I really wish I was having my own turkey day, but my stepdad takes over the kitchen so I'm at the mercy of his stuffing.

Oh, and hello! I've been a terrible commenter/follower lately! Hope you're doing well :)

I love stuffing. I'm pretty sure I could eat only stuffing on Thanksgiving and be happy. Except I might need a slice of pie too. ;-) I like the idea of adding some hot sauce! Might have to sneak some into mine tomorrow. Have a great Thanksgiving!!! :-)

Happy Thanksgiving, Steph and John!  Your stuffin' sounds good, and mine will be good, too, and I'm thankful that I can now bake my own bread for it so that it doesn't have so much salt for my ankles to contend with.  I hope you had a good workout, John, and I see that Steph did indeed bake your creation to perfection.  As for mine, I don't like sun-dried gomatoes at all, so it will have dried cranberries.  We love Tex-Mex, but not in our stuffin'!  I'm thankful for all the food bloggers who enrich my life, and that especially includes you, Steph, because you keep it real!
