Better'n Peanut Butter Chocolate cookies

Have you ever heard of Better'n Peanut Butter? It's this crazy stuff made from defatted peanut flour and it has half the calories of regular PB and only 2 grams of fat per 2 Tbs serving! I know seriously, how do they do that!?

I read about this stuff a long time ago and wanted to give it a try (it can be hard to find, I got mine at Trader Joe's). It definitely doesn't taste exactly like PB. It has a PB-y flavor to it, but something is a little off. John can eat it straight up no problem, not me, I tend to like it baked or mixed in with things. Hence the cookies I made :)

These are basically a low calorie/ low fat cookie to fulfill your PB and chocolate cravings :) John and I both give them a thumbs up for sure :)

Better'n Peanut Butter Chocolate cookies
(I was just experimenting with these so this recipe only makes 12 cookies, next time I'll double the recipe)
1 egg
1/2 cup splenda granulated (or 1/2 cup white sugar)
1 Tbs brown sugar
1/2 cup Better'n Peanut Butter
2 Tbs cocoa powder
1/2 tsp baking powder
1/2 cup whole wheat flour

Beat eggs, sugar, and peanut butter in a bowl until combined. Stir in flour cocoa, and baking powder. (FYI, the dough is really thick and sticky) Drop heaping Tbs of dough onto a silicon baking mat, press cookies a little flat. Bake at 350 F for 15 minutes.

Chow!

I have heard of that peanut butter, never tried it before though. These look really good, and they get bonus points for being relatively healthy :)

I actually had looked far and wide for a peanut butter substitute and concluded that I just plain don't like it enough to make room for all the denseness of its calories.

BUT! You have saved the day! Now I can continue to secretly feed everyone low cal cookies.

I just recently tried Better'n Peanut Butter: I am a *huge* peanut butter fan - straight up ground peanuts - so I was always against this product, hah.

Although now that I am trying to lose some gained weight I do not trust myself around peanut butter enough to buy a jar. haha. I decided to give this a go and it was SO much better than I expected! Granted, I still love my organic pb but this is a good subsitute for a while if you think of it as a somewhat different spread.

I actually ate Better N Butter for awhile until I switched over to natural peanut butter, but I thought it was pretty good. I didn't ever think to cook with though--great idea!

I'm totally a 100% natural, no salt added PB girl, but this stuff works great for recipes, and especially if you are looking to cut out some fat and calories :) yum!

can you tell me how many weight watcher points these are or the nutritional information?

Each cookie has 63 calories, 1.8 g of protein, less than 1 gram of fat, and about 8 carbs. Not sure what that equals in WW points but hope that helps!

Tried these and they are wonderful! I am a grad student in nutrition and use Better n' Peanut Butter in the food lab all the time in place of peanut butter when I am modifying recipes for obese/diabetic populations, but it is fabulous for anyone who wants to limit their caloric intake. Thanks for yet another BPB yummy idea!

P.S. Consumers in the Houston, TX area can find Better'n Peanut Butter at Whole Foods Market, Central Market, HEB & Super Target stores.

SherLou - I ran the recipe through the WW recipe builder, they are 2 Points each, whether you make them with sugar or splenda. I am going to make some tonight, thanks for the recipe Steph!

I made these cookies last night for my daughter & her friend because they love Better'n Peanut Butter. They were a hit! I doubled the recipe, added about 1/4c of choc chips and sprinkled them with powdered sugar when they came out of the oven. The best part is you don't have to feel guilty about eating them.

Made these today, not bad! I will definitely be making again.
