Healthy shoestring sweet potato fries

Yes you heard me right, healthy fries! I've tried baking fries a ton of times and although they come out tasty, they don't taste like the fries we all know and love. THESE however...


... are amazingly close! We DEVOURED these in a matter of minutes. They were so good, and with the dipping sauce from cooking light... *swoon* to die for. The recipe has you blanch the fries for 10 minutes in hot water, and truthfully I think that made all the difference in the world for their taste and texture. I seriously want to run to the store to get some more sweet potatoes so I can eat these every night this week :)

Shoestring sweet potato "fries" with Garlicky Dijon Mayo
adapted from Cooking Light

1 teaspoon rice vinegar
1 large garlic clove, minced
3 tablespoons miraclewhip
1 1/2 teaspoons whole-grain Dijon mustard
1 teaspoon chopped fresh parsley

1 1/4 pounds sweet potatoes
1 tablespoon olive oil
1/4 teaspoon sea salt
Cooking spray


1. Preheat oven to 450°.

2. Combine vinegar and garlic in a small bowl; let stand 5 minutes. Stir in mayonnaise, mustard, and parsley.

3. Cut potatoes lengthwise into 1/4-inch-thick slices; stack slices and cut lengthwise into 1/4-inch-thick strips. Place in a large bowl; cover with hot water. Let stand 10 minutes. Drain potatoes; pat dry with paper towels. Combine potatoes, oil, and salt in a large bowl; toss gently to coat. Arrange potatoes in a single layer on a baking sheet coated with cooking spray. Bake at 450° for 35 minutes; carefully turn over and bake an additional 10 minutes or until lightly browned. Serve with sauce.


These are addicting, seriously don't just get 1 1/4 lbs get a 5 lb bag of sweet potatoes and go to town with these things :D

I love sweet potato fries and this healthy version sounds excellent! Sounds good with the Garlicky Dijon Mayo.

I've heard great things about sweet potato fries but I've just never tried them!! My boyfriend and I are complete junk food addicts... a healthier alternative to regular french fries would be great :)

LOVE these, sweet potato fries are better than candy!!!

Sometimes it is hard to get these perfect. They always taste great for sure! But sometimes you want that crispy, crunchy texture. Guess it's the blanching technique. We'll have to try that!

I can't even begin to tell you how much I love yam fries. I'm not a huge food food person, if that makes sense--I'm more into desserts than regular food. BUT, I could probably eat these yam fries for every meal and be content with that. If I'm having a fatty day I'd dip them in ranch too (yes it sounds gross...don't judge me :))

These sound delicious! I have had sweet potato fries at a few restaurants but they have always tasted a little greasy. Your recipe however seems like you may have solved that problem! I'll have to give these a try.

Steph, excellent recipe so delicious n simple. My kids loved them. Bec I love spicy, I wld do them with a twist of chilli flakes as an appetizer at dinner parties. Thanks!!

Is the Miracle Whip important or could I use a light Mayo?

You can definitely use light mayo! It will have a little less tang to it but
I'm sure it will still be delicious :)

I thought at first that I was imagining things.  I saw....Miracle Whip in a recipe!  The mayo snobs always make dirty cracks about my favorite sandwich spread/potato salad/cole slaw ingredient, and I think they've indimidated those of us who really, truly don't like mayo.  (No flavor, IMHO.)  It's funny, though, because whenever I share my MW creations people tell me its the best they have ever eaten.  My chicken salad is to die for, they tell their friends, but I won't share the recipe with them because their faces will turn an unhealthy shade and they will become faint because I don't use their snobby, yucky, much-too-bland mayo.  I've seen it happen.  I love Miracle Whip, and I'm not gonna change, lol!  (Try mixing MW, Dijon and dill weed for a fabulous dip for popcorn chicken.)  Hugs, Steph, you made my day!
