Asian almond slaw

Is it friday yet? Really?? WOOHOOO! We were supposed to get a snowicane... a snow storm and hurricane mixed together. So far not so much... this is a picture from Thursday morning... I'm writing this Thursday evening so it's rather possible when this posts I'll be burried under the snowicane... lets cross our fingers and hope it's not too bad :)


This dish has nothing to do with snow... I love an asian twist on cole slaw. My go to recipe is a tasty PB sauce for sure... but what if we mixed it up and used almond butter instead? The result... delicious!

Almond Asian Coleslaw
1/2 head green cabbage chopped into thin strips
2-3 carrots, sliced into thin strips using a vegetable peeler

3 Tablespoons almond butter

2 Tablespoons low sodium soy sauce

2 Tablespoons rice vinegar

2 Tablespoons light brown sugar

Sprinkle top with sesame seeds

Chop and slice cabbage and carrots and place in a festive bowl. In a small bowl blend together almond butter through brown sugar. Once your sauce is all incorporated, pour over cabbage/carrot mixture and toss to coat. Refrigerate until ready to serve, then sprinkle with sesame seeds.

This stuff tastes even better the next day after it's had time to marinate.

Ergo Chef Knife review

So I got an email the other day from the people of CSN stores. They have over 200 websites, one of them being cookware.com They asked if I'd like to do a review of one of their many offered products and I was happy to agree :)

You could easily spend hours on that one site alone... not even counting the 200 sites they have! (one being all dedicated to bar stools) After some serious searching and a little internet research I decided on an Ergo Knife. Check out the angle of the handle! Don't you hate when you are chopping away and bang your knuckles on the counter?? Or is that just me being clumsy??? Well problem solved with this knife! It's super comfortable and your hand doesn't get tired from excessive chopping. If you want to buy one you can find it here.

The blade was also super crazy sharp... like so amazingly sharp I had a feeling if I tried to chop an appendage off... it would have cut through like butter! Good thing CSN also sent me this great knife guard! Super handy!

I kept exclaiming out loud how sharp it was, John came wondering in and was like "let me take a look at this thing" next thing I knew he was chopping all of that nights dinner ingredients up for me, score! So if nothing else this knife will get you some extra help in the kitchen since it's so fun to use :D


The other great thing that came out of this is this past weekend John and I were looking online for a mirror to buy for a wall in our new house. We found this one a department store on sale for $60... but after shipping and tax it was over $80... a quick search via google and I found the same mirror at Accent Furniture Direct for $55 with free shipping! Now I'm always a little skeptical of random websites... but then I saw up in the corner that this was a CSN store!!! NOWAY! What are the chances of that? Well once I saw that I felt confident in ordering and we should be getting our mirror any day now! Woohoo! And we saved almost $30! (I'm telling you this out of pure coincidence, nothing from them telling me to promote their other sites or anything like that... just a crazy coincidence that made me happy and I wanted to share) Here's the link to the mirror if you want it.

B is for Broccoli

Do you hate or love veggies? I'm a picky veggie eater, they have to be done right or I wont eat them. John just hates them, (yeah that's right "mr I eat healthy" doesn't like veggies) But I make him eat them anyway... so sweet of me right?

I'm always looking for quick and easy side dishes to add along with dinner. I found this one from Cooking Light and figured I'd give it a go! Only change I made was to add some sesame seeds into the mix.


The flavors weren't as intense as I thought they would be... 3 cloves of garlic and red pepper flakes?? I think steaming them at the end somehow lessened the intensity. Next time I'll add even more garlic and pepper flakes :)

Chocolate Almond Shake

Well I couldn't just stop at cookies with the almond butter! We had to add it into a protein shake for a little something fun :)

Why is a protein shake in a shot glass you may be wondering... because things are always cuter in smaller packages :)

John is a protein powder connoisseur. Some people may know wines... John knows protein powder! Hmmm I'd say it's a 2010 with a very floral bouquet...

umm yeah anyway... some protein powder has a really chalky taste to it.. bleh! But adding a dab of almond butter solves that problem quick!


John's chocolate almond shake

2 scoops chocolate protein powder
2 cups fat free lactaid
1 Tbs MaraNatha almond butter

toss it all in a blender, hit go... drink it up!

Almond Butter Cookies - vegan friendly


I'm back in baking action!! Wooohooo! We finally had a relaxing weekend where we weren't rushing around. Ahhhh did it feel good. One of the things I wanted to do this weekend was experiment with some jars of creamy almond butter that MaraNatha sent to me. I was so excited when they asked if I'd give their nut butters a try!! I heart nut butters!


I also heart PB cups... so I figured I'd make an inside out almond butter cup cookie as my first experiment :) This is for a small batch so totally double it unless you're making just enough for yourself and your sweetie :) Oh and a bonus, these are vegan!


Inside out almond butter cup cookies
recipe by steph chows
makes 9 cookies

whisk together:
1/4 c whole wheat flour
1/2 tsp baking soda
1/2 tsp cinnamon

cream together
1/2 cup almond butter
1/4 cup brown sugar

then in a small bowl mix together
2 Tbs flax meal plus 2 Tbs water

You will also need:
9, 1/2 inch chunks of dark chocolate

Add flax mixture to almond/sugar mixture, then add in dry ingedients. Mix until incorporated. Using your hands grab off 1" size balls and stuff a hunk of dark choclate into the center of each, roll into balls and place on an ungreased baking sheet.

Bake at 350 for 10-12 minutes

Enjoy your tasty almond cookies with a glorious chocolate center!

Friday

Happy Friday everyone!!!

Ummmm... so between trying to figure out wedding plans... meetings with realtors... lawyers... mortgage brokers... sleeping... and going to the gym... I really haven't had much free time to cook and bake :(

Don't you worry though! I'm still chowing like my normal self :) Just not as interesting stuff, nothing picture worthy or exciting.

I know!! I totally feel like I'm letting you guys down! The good news is there aren't any big plans that I know of yet for this weekend... so HOPEFULLY that means plenty of time in the kitchen for me!

Since you stopped on by... here's a look at the cute home John and I will hopefully be living in soon!

All I can say is bring on the two car garage baby!!! So excited we both get to park inside :)

On a side note... My chocolate cream pie made Foodbuzz's top 9 today!!

Banana Oat Muffins


John's getting sick of banana flavored baked goods... whoops... guess I've been making a bit too many lately... so what do I do? I make banana muffins... but I had more black bananas!?! What? I'm supposed to just freeze them and use them later?? And NOT torture him with more banana baked goods... oh yeah I guess that would have worked too... but since I'm so sweet I make him suffer :)

Zevia


I won a 6 pack of zevia a little while ago on Vegan-minded. I'd heard a ton about it but hadn't had a chance to try it out. They have 6 flavors and I got to try a little variety pack of them. They came on an especially cool day (highs in the teens) so I was a bit worried they would freeze and explode!

Thankfully they all made it unscathed, just half frozen :)

The first I tried was the orange flavor... this is when I realized they were half frozen. Popped it open and *pfffffff* soda all over the place haha, I have to say though the orange with half frozen crystals is really good! It was like an orange slushy :)


The next flavor I tried was the cola.... ummm yeah... I'm a diet coke lover (I know I know bad chemicals... but I like it!) this doesn't taste like diet coke or diet pepsi... which is probably a major bonus for many people... I just wasn't digging it so much.

Onto natural twist! I'm a huge fresca fan so I was excited to try this flavor... ummm yeah... and it has a kinda weird small to it, anyone else notice that? Maybe I'm just a werido.

OK next was black cherry! I full expected it to be a dark soda... nope, it's clear! I liked the flavor of this one, and no weird smells like the natural twist :)

I haven't tried the ginger ale or root bear yet but I have high hopes! I'm a total fan of the orange and the black cherry... and I highly recommend half freezing them to make slushies! YUM!

Chocolate Cream Pie


Happy day after valentines day! Happy day after Chinese new year... and happy presidents day! So are you all off from work and sitting on some bar stools somewhere? Not me, I'm at work... so no rubbing it in if you have today off!

I'm not a big valentines celebrator but it's always fun to do something a little special. John however is more of a romantic and I think he gets a little bummed that I'm not all gun-ho about V-Day... I try my best though... I mean I gotta show the man I love him! John loves boston cream pies, but never eats them due to the badness level of them. Personally the vanilla creamy center skeeves me out... not really sure why but bleh!! So off I went to make him a fun lightened up version.

I used my chocolate cupcake recipe (minus the chocolate chips) as the cake part and just made it in an 8 inch square cake pan and increased the time by 7ish minutes. The creamy center comes from cooking light... and the topping is just melted chocolate YUM!!


Tada! Now John can't complain that I didn't get him anything for Valentines day :D

Vegan Agave PAMA Oatmeal Cookies


Have you ever heard of PAMA? It's the best smelling thing ever! It's pomegranate liqueur and it is like heaven. The wonderful people at PAMA asked if I'd like to sample some of their amazing product and of course I couldn't say no! They are also currently selling a PAMA infused cupcake ... perfect for valentines if you ask me!

I decided I wanted to bake with my PAMA... I know I know... why not just drink it? Well they sent me two little bottles so I figured I'd drink one, and play with the other :) Seems my favorite thing to do is boozing up raisins, so that's where I started. I also decided to use agave as my main sweetener and go all organic on these cookies!


The dough is amazing... in all reality next time I make these I'll be nixing the oil and forgoing the baking... I'll just mix the rest up and use it as an ice cream topper... because seriously... the dough was amazing. I felt like I could get a buzz off of it, it smelled intoxicating! The cookies were darn tasty... but some of the intense PAMA flavor that was so powerful in the dough... baked away *tear* it really was a sad affair. Also the cookies fell apart a bit... next time if I do bake them I'll add in 1 Tbs of flax meal mixed with a little water as a binding agent. That way they wont be so finicky.



VAPOC (Vegan Agave Pama Oatmeal Cookies) cookies!
recipe by steph chows

mix together
1/2 cup old fashion oats
1/2 cup whole wheat flour
1/2 cup unsweetened coconut
dash of salt

In a bowl stir together and let soak 20 minutes
1/4 cup agave
2 Tbs PAMA liqueur
2 Tbs canola oil
1/4 tsp vanilla
1/3 cup raisins

Didn't do this part... but should have:
mix 1 tbs of flax meal with 2 Tbs water, add to wet mixture to help hold things together...

Mix wet into dry, scoop into teaspoon sized mounds on a greased baking sheet and bake at 350 for 15 minutes.

To make as an ice cream topper, nix the oil and flax and serve over a nice bowl of ice cream... or rice cream if you want to keep it vegan :)

Back to baking

Man between looking at houses, putting in offers, going to the wedding dinner tasting, oh and did I mention my parents were in town too for it?? Yup they made it OUT of DC just in time before they were hit with 2 feet... getting back was the issue though! They were suppose to fly home sunday... yeah that didn't happen. Two canceled flights later they were finally home and are now snowed in even more!! Another foot yesterday anyone?? CRAZY!!! I told them they should live up north like me where we don't get crazy snow like that :D

With all that craziness I didn't bake again this weekend... let alone cook! We seriously ate out lunch and dinner every night... oh and did I mention I also had my wedding dress fitting? Yup no working out, eating like mad... now lets go try a dress on! Who the hell made this appointment... oh wait it was me...



Anyway... in celebration of my parents getting back to DC... but now being snowed in and without a large variety of things to eat.. I bring you whole wheat yeastless foccacia bread! Mom IM'ed me today and said... we don't have bread... but we want to make some.. oh and we don't have yeast. Well mom I have the perfect bread for you!!


Whole Wheat Yeastless Focaccia
recipe by: Food for Laughter slightly adapted by me

2 cups whole wheat flour
1 cup white flour
2 T raw sugar ( I used 1Tbs splenda blend)
1 tsp salt (I used a little less of Kosher salt)
1 T baking powder
1/2 tsp dried oregano and thyme leaves I bet red pepper flakes would be good too! (I added this in my version)
1 (12 oz) bottle dark beer (I used Yuengling Black and Tan)
1/4 cup water
2-3 T olive oil
1/4 to 1/2 tsp dried oregano (I also added thyme leaves)
1/4 tsp salt (I used large grain sea salt)

~ Preheat the oven to 375 degrees. Coat an 8X8 baking pan with cooking spray. (Next time I'm going to use a bigger pan and spread it thinner, the top crust was my favorite part... I want more of it next time :) )
~ Stir together the flours, raw sugar, 1 tsp salt, baking powder, and spices.
~ Pour in the beer and the water, and stir until just combined.
~ Spread the dough into the baking pan.
~ Drizzle the olive oil across the top of the dough.
~ Sprinkle the dough with the oregano and 1/4 tsp salt.
~ Bake for 30 minutes - until a toothpick inserted in the center emerges clean.
~ Serve warm, sliced from the pan, and dipped in olive oil and herbs...

Be prepared to have to hide this so you don't eat the whole thing.

500 and wedding chow

OK I think this is the 500th post now... woohoo! Happy 500th little blog!! Thank you everyone for all your kind words yesterday! You all rock!!

So this past weekend was kinda crazy. I had my first wedding dress fitting (still love it!) ate a ton of great chow at the wedding tasting... and bought a house!!! A HOUSE???!!! John and I have been looking and we finally found something and pounced on it! The inspection is saturday so everyone say a little prayer or send good vibes our way that all goes well! Once that's done it's going to be a race to close by March 12th!!! INSANE!!!

OK back to wedding chow, the third most important aspect of getting married! 1st is the whole you know actually getting married part. 2nd is photography... 3rd is food!

As you can see I just had a little point and shoot and no flash... so not the best images but hey just wait for the professionals on the big day!

Some of the highlights:
Favorite salad option: Crisp Romaine with mandarin oranges cran-raisins, toasted walnuts, and honey lemon poppy dressing. We ALL loved it!!


Favorite Pasta Dish:
No contest it was the sweet potato pecan ravioli with caramalized leeks and onions A+

Favorite Fish Dish:
Herbed talapia... I know it's a bottom feeder and at the bottom of the fancy fish food chain.. but you know what?? It was so amazing I couldn't get over it. Totally a surprise.

Favorite Chicken Dish:
Chicken Marsals with button mushrooms

Favorite carving station pick:
Carved beef tenderloin with burgundy demi glaze

There were also three bakeries there with cakes.


I have to say... wedding cakes always look nice... but I'm never a huge fan of the flavor. I can't stand butter cream... just can't do it... and the cake is almost always dry from being frozen before decorating... these are the reasons I don't want a wedding cake. I think just a bunch of different small bakery cakes would be perfect! Nothing fancy decorated just something tasty :)

499th Post

So I noticed the other day I was almost to 500 posts!! Today makes 499! Pretty crazy huh? Who knew this little thing would take off and I'd get to meet so many wonderful people!! I'll be celebrating my 2 year bloggiversary on the 13th too!! I want to thank you all for all of your support and coming back to read and comment. Seriously I still get excited every time I get a comment, so keep them coming!!

To think just two years ago I was excited to have 500 people come see what I was about that first month. Now on some really good days I see over 1000 in a day! You have no idea how much that makes me happy!!

Lets celebrate by reviewing some of the highlights!

My first post ever... I was getting ready to start cupcake hero! Man have my recipes improved since then...



The first real hit was on January 8th 2009 with 410 hits!!! Apparently my crochet was more exciting than my chow... hmmmm


The next big day of hits was when John took over with a guest post! John stealing my glory with over 800 hits!!
The post that got the most hits in one day was just this January 13th and the post was for the infamous poose cookies! It got over 1600 hits in one day! I blame the spike on new years resolutions and the need for healthy cookies!


Since day one the hits have gone up and down... but all I know is they will keep coming as long as I keep up with the tasty chow! Thank you all so much for joining me on this journey 499 posts strong. It means the world that you are all out there coming to sneak a peak into what I've been up to.

Hedonist Chocolates


The name pretty much says it all doesn't it? Hedonist artisan chocolates is a local to Rochester company and one thing they specialize in is wedding favors (as shown above) I actually got this sample at a wedding show I went to a few weeks ago and wanted to tell you about them.


Even though they are local to Rochester, you can buy them no matter where you live on Foodzie! I'm not getting paid to tell you about this, nor are they sending me anything... although if you'd like to Hedonist just send me an email :D

I feel in love with their truffles pictured above, sea salt encrusted anyone... amazing!!! Don't worry they don't just do wedding favors, they do much much more!! The S. Pellegrino Almost Famous Chef Competition

So I got an email from Foodbuzz the other day about a contest to go see The S. Pellegrino Almost Famous Chef Competition.

"The Almost Famous Chef Competition gives top culinary students from around the world a chance to showcase their skills to top chefs, culinary experts and media and the opportunity to win cash and a paid apprenticeship with a top chef to jumpstart their career."
How freakin cool would that be to win a trip to see that! If I won I'd get to be a VIP at the event! I wonder if I'd get to try the food? One would think so right? If I was picked to go I'd take so many pictures it wouldn't be funny and would tell you all about it! You'd feel like you were right there with me :)

OK everyone cross your fingers! :)

OH and John and I have our wedding tasting party this weekend! My mom and dad fly in today for it woohoo! I'm going to be taking crazy pictures of all that too so you can all see the options and help me pick what to serve ;)

Banana Oat Bars

One of John's coworkers has taken notice of all the random baked goods he brings to work with him for snack time, and asked when I was going to make something for John to bring in and share. He gave me a challenge.

I challenge you to make me something that's tasty and ridiculously healthy. Pack it full of fiber so that I don't realize it until its too late!

I can't not take a challenge!! So I think I'll be making a batch of these to send in with John next week... what do you think... enough fiber for him??


I'm in love with this recipe and this has been tweaked thanks to my friend Niki (not the original Nikki of the recipe...), she was out of almonds to make almond flour so she used whole wheat, and she didn't have rolled oats so used quick oats... they came out with a better texture than the original if you ask me! I can't wait to send them in with John and see how everyone likes them :D

Banana Oat Bars
These are adapted from 101 cookbooks Nikki's cookies.

3 large, ripe bananas (the browner the better!), well mashed (about 1 1/2 cups)
1 teaspoon vanilla extract
1/4 cup unsweetened apple sauce
2 cups quick oats
1/3 cup whole wheat flour
1/3 cup flax seeds
1/3 cup coconut, finely shredded & sweetened
1/2 teaspoon cinnamon
1/4 teaspoon fine grain sea salt
1 teaspoon baking powder
1/2 cup dark chocolate chips
1/3 cup dried cherries or other dried fruit of your choice

Preheat oven to 350 degrees, racks in the top third.

In a large bowl combine the bananas, vanilla extract, and apple sauce. Set aside. In another bowl whisk together the oats, flour, flax seeds, shredded coconut, cinnamon, salt, and baking powder. Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks and dried fruit. Press the mixture into a greased 8" stoneware pan and cooked them for about 30 minutes. I cut them into 12 bars.

Health it up Banana cupcake edition


OK everyone, I'm very excited to bring the second edition of health it up!! The first round took place with Val and her coconut bar recipe (read about it here). This time Gina asked me to health up a banana cupcake with cream cheese frosting! Well Gina, here you go! Now who's next?? Got a recipe you love but it's awful for you?? Send it to stephchows at gmail.com and I'll do my best to heath it up and keep it super tasty!


banana cupcakes
recipe by stephchows

Beat the following together in a bowl
1 Tbs ground flax seeds + 3 Tbs water (do this first then add the rest of the stuff)
2 cups bananans
1/3 cup apple sauce
1/2 cup white sugar (I used splenda granulated)
1/4 cup brown sugar (packed)
1 egg
1 tsp vanilla

Whisk the following in another bowl
1/2 cup all purpose flour
1 cup whole wheat flour
1 tsp baking soda
dash sea salt
1 tsp cinnamon

Then slowly add the dry mixture to the wet, alternating in the following
1/2 cup skim milk + 2 Tbs nonfat milk solids (powdered milk) (if you don't want to buy dry milk solids just use whole milk... I never have any so I use this lower fat trick to thicken it up a bit)

Pour into a cupcake holder lined muffin tin (makes 12) and bake at 350 degrees for 20-25 minutes or until tester comes out clean.

Now for the frosting... so I had some Panera low fat hazelnut cream cheese laying around... so I topped one with that and OMG it was good!!! Now if you aren't looking to buy the cream cheese premade up for you I'd use this sweeter go to recipe.

lighten cream cheese frosting
8 oz 1/3 less fat cream cheese at room temp.
1/3 cup powdered sugar
1 tsp vanilla

Beat with a whisk until fluffy and creamy. Top cooled muffins and serve. :)


And then on a completely unrelated note... I bring you the work cats... snuggling on my desk and making me sleepy.

Pancake wars


OK I did make the healthed up cupcakes... but the pics were awful in the non wonderful daylight... so I'm taking some today and will have it posted tomorrow!

Instead you get not the best pictures of pancake wars! Actually that's not the name of the event... but doesn't it just sound fun and overly dramatic! We've been here before, recipe round robin with Aleta of Omnomicon.com she's hosting it again and this time it's a dual of the pancakes!! People submit their recipe and she sends two out to everyone who signs up to be tastebuds. I have a recipe in the running this time, as well as being a tastebud!


I got two recipes to compare... I can't give them to you yet, you'll have to wait for Aleta to tell you. Oh and there are more than these two up for the competition... and neither of these are mine (I mean that would be biased if I got my own... of course I'd pick it ;) )


The batters were almost the same, one made with buttermilk, one with normal milk... the buttermilk recipe had you mix the wet into the dry... the other way for the normal milk one. I must say mixing wet into dry seems like the way to go... way less lumps that way! See I learned something :D


Hmm one seems to be a bit fluffier than the other...


Yup... definitely fluffier... don't worry I'll let you know when she posts the full on results :D

Monday and Baking

Hey happy monday to you! Oh and happy February... man when did that happen?? I really should have a new recipe here waiting for your hungry eyes huh... well here's the thing... John and I spent all day saturday in precana (aka catholic premarriage class... right) amazingly it really wasn't bad! AND they fed us well... what more can you ask for right? Bagels and fruit for breakfast. For lunch there was, salad, tasty bakery rolls, roasted chicken, Italian sausages with pepper and onions, salt potatoes, baked ziti, cupcakes, cake...tasty right? Well since we were stuck in that all day... I didn't get to bake at all... and then Saturday night we went to this amazing gallery opening! IT WAS SO COOL!! Read about it here and pics here! So that just left sunday to bake... but we were scheduled to go look at a bunch of houses... so I only got to bake 1 thing... and it's something I already posted about...

Blueberry LOAF!


OK this picture is of the raspberry loaf version.. but sub in blueberries and that's what we had :) Sorry for the lack of new pics and fun recipes... but I'm working on it! And hopefully will have something new and exciting baked up and waiting for you tomorrow. :) Maybe those healthed up banana cupcakes?? YUM!!
