Addicting is the best way to describe these biscotti, SERIOUSLY addicting. I tend to bake things and then either give them away or John eats the rest of them. Yup once baked goods are cooled and a day old I'm a bit of a snob and don't want to eat them.

Not these.

These I will happily eat days after they have been baked, I may be in love with them. Don't tell John.

The secret is the espresso power, why oh why have I never bought this stuff before? Oh right, the price tag. Well I ponied up the money and bought a bottle, whenever things called for it before I use instant espresso which normally left a bit of a bitter taste to things. Not this stuff, this stuff is heaven (I got it from William Sonoma-that place is hazardous to my wallet, oh how I love it though). That plus a handful of cappuccino chips from KAF melded perfectly with the milk chocolate chips.

LOVE.

Buzz Buzz Biscotti
recipe by steph chows

¾ cup whole wheat flour
½ cup white flour
1/3 cup splenda (or 1/3 cup white sugar)
2 Tbs brown sugar
1 tsp baking powder
1 tsp espresso powder
¼ cup unsweetened coconut chips (flakes work too)
¼ cup slivered almonds (or chop up some whole almonds)
½ cup chocolate chips
¼ cup capuchino chips
2 eggs, lightly beaten
1 tsp vanilla
drizzle of agave or honey if things are aren’t wet enough

Combined flour through chocolate chips in a large bowl. Add beaten eggs and vanilla and stir until a stiff dough forms. If you need a little more liquid drizzle 1-2 tsp of agave or honey and keep kneading. Form into a rectangle about 1 inch thick on a silicon baking mat on a cookie sheet. (Wet hands help here so the dough doesn’t stick to you). Bake in a preheated 325 oven for 25 minutes. Once the top is brown and baked through remove from oven and place on a cutting board. Slice into ½ -1inch slices and place back on baking sheet. Continue baking 10-15 minutes or until all sides have browned.

So what are all of your weekend plans? I need to bake something up for mother's day for John's mom, other than that.. maybe we'll hit up Imagine RIT on saturday. How about you?

When did August get here by the way?? On another note, have I mentioned that I really like iced coffee? Dunkin Donuts is my favorite.. I know I'm so high end classy right? Sometimes I'm too lazy to leave work and drive to a DnD (as I like to call them), so I plan ahead and make iced coffee at work. It takes overnight though... which can suck when you have a hankering and didn't plan ahead.. but if you do, it's awesome :)

How do you take your coffee? I'm a half and half with a little splenda kinda gal.

Cold-Brewed Ice Coffee
New York Times 6/27/07

Yield: Two drinks

1/3 cup ground coffee (medium-coarse grind is best)
Milk (optional)

1. In a jar, stir together coffee and 1 1/2 cups water. Cover and let rest at room temperature overnight or 12 hours.

2. Strain twice through a coffee filter, a fine-mesh sieve or a sieve lined with cheesecloth. In a tall glass filled with ice, mix equal parts coffee concentrate and water, or to taste. If desired, add milk.

It really is just that easy! And you will be so surprised by the taste. Give it a try!

How awesome are friends? Pretty awesome. How awesome are friends who roast their own coffee beans and then share them with you?? WICKED AWESOME!!!

I worked with Tim a few years back, but then he went off and moved away! How dare he :) Thankfully due to this wonderful thing call the internet, we stay in touch. Tim was in town for a concert a few weeks back and we met up for coffee and he came bearing gifts!!

Description of his coffee:

Sweet Maria's: Guatemala San Jose Pinula - La Trinidad
Full City ro FC+: A classic Central profile, great body, bittersweet chocolate, intense, tangy roast notes and a twist of lemon rind.

I seriously think he should start selling the stuff. TIM START SELLING THIS!! You'll make $$$!!! Thank you so much for the coffee and let me know when you want to start selling!! I'll design your logo in exchange for beans ;)
So for those of you who don't know. I work in an office that is really a house, full kitchen, cats, it's like working from home... just not mine :) Anyway meet Diva and Vida, they are sisters and spend their days sleeping on my desk. You'll see I put a lid of a box on my desk to contain them... otherwise they would be all over me and I'd get no work done. They love snuggling, and this is pretty much status quo for the ladies.

You're probably wondering what this has to do with chowing... well seeing those cute kitties all curled up all day makes a lady pretty sleepy herself. A little coffee can do the trick but sometimes I'm more in the mood for some ice coffee instead of the hot variety... I had read on smitten kitchen the other day about making ice coffee. I love ice coffee and normally just brew some coffee then chuck it in the freezer, it's not the best but it works in a pinch... well not anymore!! Smitten kitchen gave me incite into making ice coffee so very easily at home, and it tastes so much better then cooling off hot coffee. It's amazing how much more intense the flavors are. AMAZING!!! All it takes is a little of planning before hand but it's totally worth it. Here is the recipe straight from her site...

mmmm coffeee can I have a sip??
